Sundried Tomato, Olive and Cheese Scones

A tasty way to start your day, these scones are perfect served hot and toasted with butter!


Makes 16 large scones


Ingredients

150g sun dried tomatoes

100g green olives

4 tbsp curry powder

2 tbsp basil

salt and generous amount of black pepper

180g butter

700g flour

3 tsp baking powder

350g grated cheese (1 part grated manchego: 2 parts strong grated cheese)

300ml milk


Method

  1. Add your flour, baking powder, salt and pepper, spices, herbs and cheese to a bowl.

  2. To this then add your milk and butter mixed together and heated and stir until combined into a shaggy dough.

  3. Cut up your tomatoes and olives into small pieces and fold into the dough. Knead until elastic and ingredients are well spread throughout the dough.

  4. Roll out to one to two inches thick. Cut into 16 large scones.

  5. Brush with butter and place on a lined baking tray, into a preheated oven at 160 conventional, fan 140 for 30-35 mins or until golden on top.
