Finally got all my equipment to start making my own roasts! And so here goes
Ingredients
For the beans
250g Colombian arabica raw green beans (I used excelso huila beans)
For the blend
The same beans now roasted
7 5g dark chocolate
3 large oranges
Sprinkling of dark brown sugar
Method
Roast your beans in your electric roaster at 220C for 13-15 minutes, until the first and second crack have occurred and the beans have turned a very dark brown. Remove them just before they blacken and burn. If you do not have a roaster, the process can be done in the oven if you google the relevant times and temperature adjustments. You can also use pre-roasted beans.
Peel all 3 oranges and place the zest on a baking tray in the oven at 150C fan/ 170 conventional for 10-15 minutes until curling and dried. Tear into pieces and then blend into small bits/powder.
Melt your dark chocolate in the microwave before stirring in the juice of 1 orange and the zest of all 3 oranges. Return to the microwave for a further 20-30 seconds then stir and add the juice of another orange. You do not need the juice of the third.
Mix in your roasted beans and then spread the beans out on a lined baking paper, sprinkle over some dark brown sugar, and place in the freezer for 15 minutes until cooled.
Chop the beans roughly with a knife before adding them into a blender to blend into a fine powder. Make sure to add any of the chocolate mix left on the paper.
Enjoy! Add 2-3 heaped teaspoons to a cafetière and serve once cooled slightly as you prefer. I enjoy it with milk. The flavour is quite subtle but is a definite aftertaste of orange and a bitter sweetness.
